Preparing and cutting fish for sushi and sashimi with precision and care Making nigiri, sushi rolls, and other sushi dishes to a high professional standard Supporting the kitchen with tempura preparation and simple hot dishes when required Maintaining high standards of food quality, hygiene, and presentation Managing stock levels and assisting with inventory control Minimising waste through proper fish preparation and ingredient management Communicating effectively with the kitchen and front-of-house team Supporting and helping to coordinate the kitchen team during service Requirements Professional experience in sushi preparation and Japanese cuisine Strong knife skills and knowledge of fish handling Ability to work efficiently under pressure in a busy kitchen environment Good communication skills and the ability to work as part of a team Basic knowledge of stock management and kitchen organisation A professional and positive attitude
